Lemon and Italian Parsley Pesto with Black Butte Reserve Cheese

This is a zesty, flavorful & refreshing pesto that is great for a summer day as well as it can also brighten up any winter day.

  I used a unique cheese called Black Butte Reserve.  It is a hard cheese made only in spring from cows that eat the freshest green grass and is for aged 6 months.  It has the lush, green grass & caramel flavors.

Recipe – Approx. 2 3/4 Cups

  • 2 Cups Italian Parsley Leaves
  • 1 Cup Raw Walnuts
  • 3/4 Cup Black Butte Reserve Cheese
  • 1/2 Cup Extra Virgin Olive Oil
  • 1/4 Cup Fresh Squeezed Lemon Juice
  • 2 Cloves Garlic
  • 1/2 Teaspoon Sea Salt

Instructions:

Wash and dry the parsley then pick off the leaves and measure, grate the cheese and measure everything then add to a food processor or blender and puree until desired texture

 Scrape the sides at least once

      I would use Asiago or Parmesan, Asiago has more flavor. I found the Black butte reserve at my local health food store, they might have it at Wholefoods. Hope this helps.
