This pesto is lightly sweet, with a bit of tang. It is such a treat, but there is one problem, you won’t want to stop eating it. It’s really great on toast in the mornings.
Recipe: Approx – 3 Cups
- 1 Segmented Grapefriut
- 1 1/2 Cups Almonds
- 8 oz Chevre Cheese
- 3 Tablespoons Maple Syrup (or to taste)
- 2 Tablespoons Extra Virgin Coconut Oil
First segment the grapefruit and add to food processor or blender.
Measure and add all the other ingredients and blend well.
