In the last three months, I have been involved with a spiritual group that has been very supportive. We have been participating in a 30-day challenge. Everyone is doing something different. I have been doing morning meditations and breathwork. It is amazing how things in your life can change for the positive when you do something on a consistent basis. It was hard to keep motivated at first but now I look forward to it.
This practice has led me to look at things that I used to do without being completely aware of them. This awareness has helped me with the mission I have been on to reduce and ultimately eliminate the things that are holding me back in my life. This includes vises, my attitude and acceptance. The progress has been slow and steady but it is starting to pick up momentum. It is not easy to let go of the things we think give us pleasure or are part of our personality. But if they compromise our health, whether it is of body or mind, it is worth it. I move at my own pace to help ensure I won’t be tempted to quit and it is working so far.
Creamy Brown Basmati Rice Cacio e Pepe - CaliZona
Ingredients
- 1 Cup Basmati Brown Rice
- 2 Cups Filtered Water
- 1 Tablespoon Butter
- 1 Vegetable Bouillon Cube
- 1 Teaspoon Sea Salt
- 3/4 to 1 Cup Half and Half - depends on how loose you want it.
- 1 Cup Pecorino Ramano
- 1 Teaspoon Coarse Black Pepper
Garnish options
- Fresh Cracked Pepper
- Cherry tomatoes
- Arugula
- Pecorino Ramano
Instructions

Measure the rice and rinse well. Set aside.

In a small pan, add the water, butter, bouillon and salt.

Bring to a boil and make sure the bouillon has disintegrated.

Pour in the rice, stir and turn down to a simmer, a little above low.

Cover and simmer for one hour. Make sure and use a timer.

When the timer goes off, remove the pan from the burner and let rest for at least 15 minutes. This part is crucial.

After 15 minutes, fluff up the rice with a fork.

Stir in the half and half over medium-low heat.

Add in the cheese and black pepper and stir well.

Garnish and serve immediately. You can serve the garnishes on the side as well.
