This Lemon Italian Parsley Pesto is a zesty, flavorful and refreshing pesto. It’s perfect on a summer day as well as it will brighten up any winter day.
I used a unique cheese called Black Butte Reserve. It is a hard cheese made only in spring from cows that eat the freshest green grass and is for aged 6 months. It has flavors of lush green grass and caramel.
This pesto pairs nicely with a white Rioja or a Cava.
Lemon Italian Parsley Pesto Recipe
Ingredients
- 2 Cups Italian Parsley Leaves
- 1 Cup Raw Walnuts
- 3/4 Cup Black Butte Reserve Cheese - finely shredded
- 1/2 Cup Extra Virgin Olive Oil
- 1/4 Cup Lemon Juice - fresh squeezed
- 2 Cloves Garlic - minced
- 1/2 Teaspoon Sea Salt - or to taste
Instructions

Add everything to a food processor or blender and puree until the desired texture.
