These Tomato Basil Almonds are a cinch to prepare on the fly and totally packed with flavor! The tomato, basil and garlic flavors are in perfect harmony.
These almonds make the perfect snack just as they are. They are also a nice addition to a cheese platter for entertaining guests or on a salad like my Kale Crispy Black Lentil Salad.
Tomato Basil Almonds
Recipe: 3 Cups
Ingredients
- 3 Cups Raw Almonds
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 Cup Tomato Paste
- 3/4 Cup Basil - minced
- 2-3 Cloves Garlic- minced
- 1 Tablespoon Sea Salt
Instructions

Preheat oven to 350 degrees

In a medium-size bowl, add the olive oil, almonds, tomato sauce, garlic and basil and sea salt then mix well and spread evenly onto a baking sheet.

Bake for 18 - 20 minutes.

Let cool completely.
Recipe Notes
If your almonds aren't crunchy, you can put them back in the oven for a couple more minutes. You have to let them cool completly first or you won't be able to tell as they are soft when warm.
