Maple Carmelized Oats with Grapefruit Chevre Sauce and Fruit - CaliZona

Ingredients

  • Maple Caramelized Oats - recipe below
  • Grapefruit Chevre Sauce - recipe below
  • Pink Grapefruit - sliced - cut off the rind
  • Yellow Grapefruit - sliced - cut off the rind
  • Blood Oranges - sliced - cut off the rind
  • Pluots or Plums - wedged
  • Kumquats - sliced
  • Fresh Basil Leaves - optional
  • You can substitute any fruit you prefer.

Maple Caramelized Oats- 2 Cups

  • 2 Cups Rolled Oats
  • 1/4 Cup Maple Syrup
  • 2 Tablespoons Extra Virgin Olive Oil
  • 3/4 Teaspoon Sea Salt

Grapefruit Chevre Sauce - you can half this recipe or have extra

  • 1/2 Segmented Yellow Grapefruit
  • 1 1/2 Teaspoons Grapefruit Zest - microplaned
  • 12 oz  Chevre Cheese
  • 3 Tablespoons Maple Syrup or to taste
  • 1/4 Teaspoon Sea Salt

Instructions

Caramelized Oats

  1. Place the rack onto the middle shelf.
  2. Preheat the oven to 350 degrees.
  3. Line a large baking sheet with parchment paper.
  4. Turn the stove on to medium heat.
  5. Add the maple syrup, olive oil and salt to a cast iron or saute pan.
  6. As soon as the liquid starts to bubble, add in the oats.
  7. Make sure to stir continually for about 8 minutes.
  8. Spread onto a parchment paper-lined baking sheet the best you can.
  9. Bake for 8 minutes and then transfer to a cooling rack.
  10. Wait until they are completely cooled. They will harden and become crystallized.

Grapefruit Chevre Sauce

  1. First, segment the grapefruit and add it to a food processor or blender.
  2. Measure and add all the other ingredients and blend well.
