Fresh Juiced Ginger = about 1 large finger sized pieces of fresh ginger

Instructions
Simple Syrup
Add sugar and hot water together, stir until dissolved.
Ginger Syrup
Bring one cup of filtered water to a boil then add one cup of organic cane sugar. Add fresh ginger to syrup in hot pan let steep for 10-15 min.
Cocktail
Remove the stems from 6 cherries, add simple syrup, lime juice, ginger syrup and muddle cherries until completely smashed.
Add bourbon, ice and shake.
Strain the cherry juices over ice into a collins glass and top with sparkling water.
