Cucumber Parsley Pesto Recipe:

Approx. 2 Cups

Ingredients

  • 1/2 Cucumber - peeled
  • 2 Cups Italian Parsley Leaves
  • 1 Cup Raw Walnuts
  • 1 1/2 Cup Grated Aged Asiago Cheese
  • 1/2 Cup Extra Virgin Olive Oil
  • 1 Tablespoon Fresh Squeezed Lemon Juice
  • 2 Cloves Garlic
  • 1/2 Teaspoon Sea Salt or to Taste

Instructions

  1. Add all ingredients into a food processor or blender and blend until pureed.
