I am a huge fan of bubbly cocktails and this Spanish Style Cherry Saffron Bellini is no exception! It’s complex, floral, smokey, sweet, delicious and a fun sparkly beverage!
Cherries are exceptional with bourbon or an Anejo tequila which is what I chose for this bubbly cocktail. I often mix fresh fruit with a little sugar, water and spices to get a delicious syrup that is perfect for mixing into drinks. It’s a fun way to get creative with cocktail recipes. Spanish Style Cherry Saffron Bellini Recipe:
Ingredients
- 1 oz El Tesoro Anejo Tequila
- 1 oz Cherry Saffron Syrup - recipe below
- 4 oz Prosecco
Cherry Saffron Syrup
- 1 Cup De-Stemmed Fresh Cherries
- 1/2 Cup Organic Sugar
- 1/2 Cup Filtered Water
- 1/8 Teaspoon Ground Cinnamon
- 1/4 Teaspoon Ground Sweet Paprika
- Small Pinch Saffron
Instructions

First, de-stem the cherries.

In a small saucepan add whole cherries, sugar, water and herbs; turn to low heat and simmer for 30 minutes or until the cherries start to break down.

Stirring continually, smashing the cherries while they are cooking; I like to use a muddle to mash the cherries.

Once the cherries are soft and broken up, turn heat off and let cool.

Using a spoon, remove the cherry seeds. Add mixture to a food processor and blend well.

Strain cherry mix into a glass jar through a fine mesh strainer.

In a mixing glass, add the tequila along with the cherry saffron syrup.

Add ice and shake for 8 seconds.

Pour into a the glasses and add the Prosecco slowly to avoid bubbling over.
