When I think “Rickey” I think thurst quenching and refreshing. It’s getting closer to summer and I know I always like an icey cold beverage by the pool. Who doesn’t like fresh lime and spritzy!

There’s always a story behind the classics, I mean someone came up with it first. The majority of cocktails today are all taken from classic originals with “their own” twist on it. The Rickey was originally created in the 1880s with bourbon at the Shoomaker’s bar in Washington DC by bartender George A. Williamson. He collaborated with Democratic lobbyist Colonel Joe Rickey and it became a worldwide hit when mixed with gin a decade later.
Recipe: Makes 1 – 8 oz Cocktail

- 2 oz Gin
- 1 oz Fresh Lime Juice
- 3 Fresh Cucumber Slices
- a Sprig or Teaspoon of Fresh Dill
- 5 oz Sparkling Water or Club Soda

Garnish: Fresh Dill & Cucumber slice
Instructions:
Muddle cucumber and dill in a mixing glass with lemon juice, add gin and shake well, then pour over ice and top with soda.
Garnish with a fresh cucumber and a sprig fresh dill.
