Summer is officially here! I have been on a mission to create new refreshing summer cocktails and there’s nothing like fresh watermelon combined with tarragon! The mixture of these ingredients is pretty amazing!
I never thought a licorice flavor would go well with watermelon but when I get these ideas, I go for it! Sometimes it works and sometimes it doesn’t! This time it was a winner! I have to say, it’s a pretty incredible combination and the perfect summer drink!
Watermelon Tarragon Cooler
Makes 1 – 8 oz Cocktail
Ingredients
- 4 oz. (1/2 Cup) Fresh Watermelon Juice
- 2 oz. (1/4 Cup) Vodka or Sparkling Water
- 1/4 oz. (1 1/2 Teaspoons) Lemon Juice
- 1 oz. (2 Tablespoons) Tarragon Syrup - recipe below
Tarragon Syrup - enough for 4 cocktails
- 1/2 Cup Maple Syrup or 1/4 Cup Sugar
- 1/4 Cup Hot Filtered Water
- 4 Sprigs Tarragon
Garnish
- Sprigs of fresh tarragon
- Watermelon wedges
- Lemon wedges
Instructions
Tarragon Syrup

Mix the maple syrup or sugar with the hot filtered water.

Add fresh tarragon to the syrup mix, soak for 5-6 hours or overnight.
Cocktail

Muddle, blend or juice the watermelon.

Add the vodka or sparkling water, watermelon juice, lemon Juice and tarragon syrup to a shaker.

Add ice and shake well. Pour into an 8oz glass with ice.
