This is truly the “Bee’s Knees” and it’s delightful and refreshing! The Bee’s Knees cocktail is comprised of gin, honey and lemon.
The post-prohibition cocktail definitely holds true to its meaning, it’s one of the “best” gin cocktails I have ever had. During this time in history, everyone was making “bathtub gin” and in order to improve the taste, they would use citrus or in this case, honey to mask the taste. You can alter the flavor by using a different gin and different flavored honey.

- 1 oz Honey Water - I used a local Arizona Orange Blossom honey
Instructions
Honey Water

Add 2 parts honey to 1 part hot water and stir. ( this dissolves the honey and makes it easier to mix in your cold drinks)
Cocktail

Add all the ingredients to a shaker with some ice. Shake, pour and serve. For a more refreshing version, pour over ice and top with soda water.
