This Grapefruit Almond Chevre Pesto is slightly sweet, with a bit of tang. The chevre adds a luscious creaminess while the almonds provide a heartiness.
This is a beautiful dessert style pesto that is great on crostini, toast or topped on fruit or granola.
Grapefruit Almond Chevre Pesto – CaliZona
Approx – 3 Cups
- 1 Small Grapefruit – segmented
- 1 1/2 Cups Raw Almonds
- 8 oz Chevre Cheese
- 3 Tablespoons Maple Syrup (or to taste)
- 2 Tablespoons Extra Virgin Coconut Oil
- 1/4 Teaspoon Sea Salt
Instructions:
Add the almonds to a food processor or blender and process into a fine crumb.
Add in the segments of grapefruit and all the other ingredients. Blend until creamy.
