This is Robby’s guacamole recipe that he has been making ever since he was a teenager. I love it because it is creamy without using sour cream. He gets the creamy texture by using a peeled and finely minced tomato. It has the perfect balance of flavors and is amazing with some simple chips and salsa!
Guacamole is a big deal to Robby and I, as kids we practically lived on it. I didn’t like avocados until I was 14. It wasn’t until I tried guacamole for the first time in Mexico and I was hooked! This one is always a winner and it’s so simple to make.
Recipe – 2 Servings
- 1 Large Avocado or 2 Small – about 1 cup
- Squeeze of Lime – about a teaspoon
- 1/2 Small Tomato
- 2 Teaspoons Red Onion – finely minced
- 1 Teaspoon minced Cilantro – finely minced
- 1/4 Teaspoon Sea Salt

Instructions:
Mash the avocado really well and add a squeeze of lime juice then mix well.
Mince a small section of the onion really fine and mix into the avocado.
Cut the tomato in half, core and peel off the skin. Mince the tomato into a really fine pulp.
Mince cilantro and add along with the tomato and salt.
