This is a subtly sweet rustic galette. The whole wheat flour mixed with the ground almonds makes a wonderful flaky crust. You can make this more decadent by adding vanilla ice cream or mascarpone cheese mixed with the roasted fig juice or maple syrup. It also makes a great breakfast treat.
Beware it is very addictive!
I make this galette often, it’s my go to dessert when we have guest. This free form crust is less elaborate than a regular tart and less stressful.
You can use this crust for a savory galette by omitting the sugar.
Enjoy a slice with a glass of almond milk or a cup of coffee, chamomile or jasmine tea.
Recipe: Serves 8 – 10
Almond Whole Wheat Crust
- 1 Cup Whole Wheat Flour (or White)
- 3/4 Cup Ground Almonds
- 1 Tablespoon Turbinado Sugar
- 1/4 Teaspoon Sea Salt
- 1/2 Cup Cold Salted Butter
- 1/4 Cup Ice Water
Roasted Figs in a Maple Wine Sauce
- 12 Medium Black Mission Figs
- 2 Tablespoons Maple Syrup
- 1 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoons Dry White Wine
- 1/8 Teaspoon Pure Vanilla
- 1/8 Teaspoon Sea Salt
Fig mix
- 1 /2 Cup Figs – quartered
- Roasted Figs in a Maple Wine Sauce – drain liquid and set aside
- 1/2 Cup Raw Almonds – ground
- 1/4 Cup Maple Syrup
- 2 Figs Quartered for the top
Optional Topping
8 oz. Mascarpone Cheeses mixed with reserved fig liquid or maple syrup.
Instructions:
Dough
In a food processor, grind the almonds into small crumb size.
Add flour, sugar & salt In the food processor, pulse several times to combine.
And 1/4 inch piece of butter.
Pulse a few times to evenly break up the butter then add ice water slowly as you pulse, until it resembles a coarse meal with tiny pieces of butter. It will be crumbly but holds together when squeezed with fingers, do not over process.
Form dough into a 3/4-inch-thick disk and wrap in plastic, then refrigerate until firm, at least 30 minutes or overnight.
While dough is in the refrigerator roast the figs.
Roasted Figs in a Maple Wine Sauce
Pre-heat oven to 400 degrees.
Cut the stems off the figs and slice them in half. In a 9×13″ baking dish, place the figs along the bottom.. In a small bowl mix the syrup, wine, oil, vanilla and salt together then drizzle the syrup mix over all the figs.
Put in oven on the middle shelf for 25 minutes.
Let cool then puree in a food processor until smooth.
Galette Mix
Grind the almonds and quarter the figs.
In a bowl, mix together the roasted fig puree, fresh figs, almond meal and maple syrup. Refrigerate until dough is rolled out.
Crust
Pre-heat oven to 375.
Roll out the dough on a piece of parchment paper into a 12 inch circle. Add a tiny bit of flour on top so it won’t stick, then pinch together any cracks.
Fill the center with the fig almond mix leaving about 2 to 2 1/2 inches around. Carefully fold over the crust edges. I use a large knife to lift and fold the edges over.
The dough will crack a little from the fold, just pinch together.
Decorate with the 2 quartered figs
Bake for 40 to 50 minutes or until lightly golden.
