Asian Style Peanut Slaw

This slaw is crunchy, creamy and spicy with a hint of tang.  It’s not only extremely delicious, it is also very healthy and satisfying.

It is storming in Northern California and what do I do?  Make a cold salad, HA!  This is one of my favorite salads because when it comes to peanut sauce, I can’t get enough.

This slaw goes nice with a dry Riesling, Pinot Gris, Riesling, sparkling wine or a cold Sake.

Asian-Slaw

Recipe: 4 – 6 Servings

  • 3/4 Cup to 1 1/4 Cups (1 Recipe) – Peanut Sauce – (depends on how much you like.  I like a lot!)
  • 4 Cups Savoy Cabbage – thinly sliced
  • 1 1/2 Cups Red Cabbage – thinly sliced
  • 1 Organic Red Bell Pepper – diced – (about 1 cup)
  • 1 Large Carrot – shredded – (about 1 cup)
  • 1/3 Cup Cilantro – roughly chopped
  • 2 Scallion Onions – sliced – (about 1/2 cup)
  • 1/2 Cup Sliced Almonds

Instructions:

Make the peanut sauce. (can be made the day ahead, let it warm up first)

Chop savoy and red cabbage into thin slices then put in a large bowl.

Dice red bell peppers into small pieces then add to cabbage.

Shred the carrot, roughly chop cilantro, slice scallions, measure everything and add to the cabbage, then mix in the peanut sauce.

Top almonds onto individual salads.

    You rock! I had a “need” for slaw and no idea how to make it. So I picked up some ingredients I thought would work. Wouldn’t you know it- EVERYTHING in this recipe. Thanks heaps. I’m making it as soon as I get off the bus.

    This is great recipe, look similar to my vey own recipe, but I use 2 different sauce that I make they are similar to sauce they serve at Cheesecake Factory.
