Apricot, Thyme, Quince, Bourbon… oh my! This cocktail is strong but refreshing so the guys will love it!
Now is the time there are so many fresh garden ingredients you can incorporate in your cocktails it can be a ton of fun. This is a version of the smash which really originates from the classic Julep cocktail. Typically a classic smash would have mint but this time we’re mixing it up using the thyme instead.
Recipe: Makes 1 ~ 3.5 oz Cocktail
- 2 oz Bourbon ( Maker’s Mark )
- 1/2 Apricot cut in two
- 1 teaspoon Quince Paste
- 2 Sprigs of fresh Thyme
- 1/2 oz Simple Syrup*
- 2 Dashes Regan’s Orange Bitters

Glass: Double Rocks or Old Fashioned
Garnish: Fresh Thyme Sprig
Instructions:
Muddle the apricot pieces with the simple syrup and quince paste. (*sometimes you can get a tart apricot you may need to adjust your sweetness by lessening the simple syrup to 1/4oz if the apricots are sweeter)
Add bourbon, thyme and bitters.
Shake with ice for 8 sec with large ice cubes then dump all ingredients in your double rocks glass. If you want to strain the pulp out feel free I personally like it marinating in the drink.
