Cilantro Coconut Gouda Pesto

This is a very unique and incredible pesto.  The coconut mix with the cilantro is absolutely intoxicating .  Have you ever tried Kokos Coconut Gouda?  I highly recommend it!  Enjoy this pesto on pasta, rice, a stir fry or French bread, crostini and even toast.

Coconut-Gouda-Cilantro-Pesto

Kokos coconut gouda is a double cream cheese made in Holland with flavors of the tropics.  It is made with pasteurized cow’s milk and coconut cream.  It pairs very well with dark chocolate, port, red wine, pinot gris or a sparkling wine.  All I can say is, YUM!

Cilantro-Coconut-Gouda-Pesto

 Recipe: Approx: 1 1/2 Cups

  • 2 Cups Cilantro Leaves
  • 1 Cup Koko’s Coconut Gouda Cheese
  • 1 Cup Raw Walnuts
  • 1 Clove Garlic
  • 1/4 Cup Virgin Coconut Oil
  • 2 Tablespoons Fresh Squeezed Lime Juice
  • 1/4 Teaspoon Sea Salt or to taste

Instructions:

Melt coconut oil if hard and then measure all ingredients and put into a food processor or blender and puree.
