These are easy to make and are a treat to eat. The ground almonds give these cookies a really nice texture and flavor. Madeleines are a light cake like cookie that goes great with coffee or tea.
These are one of my favorite cookies, I just love the cake like texture. I use to make these at my restaurant Purple Rocks and I would pretend I was in Paris while I listened to classic French music.
Madeleine cookies are great with a nice dessert wine also known as Port. Did you know that a dessert wine can be named a Port if it comes from Portugal?
Recipe: Approx. 20
- 10 Tablespoons Butter
- 1/4 Cup Finely Ground Raw Almonds
- 3/4 Cup White All Purpose Flour
- 1/2 Cup Sugar
- 2 Eggs
- 1 Teaspoon Almond Extract
- 1/8 Teaspoon Sea Salt
Instructions:
First melt the butter and cool to room temperature.
Grind the almonds very fine in a food processor.
Pre heat oven to 375 degrees.
Measure the flour, ground almonds, sugar and salt, mix together and set aside.
In a mixer, mix the eggs and butter together on high speed for 5 minutes then add the almond extract and mix for for 1 more minute.
If you dont have a non stick madeleine pan grease and coat the pan with flour.
Fold in the flour mixture then spoon into a madeleine pan no more than 3/4 full.
Bake for 10 – 12 minutes or until the edges are golden. Let them cool and gently remove and repeat the process.
