What a great and interesting combination of flavors this pesto has. The basil and grapefruit really compliment each other and make a delightful refreshing snack or addition to a cheese plate.
Basil Grapefruit Pesto
Approx. 2 Cups
- 1 1/2 Cup Fresh Basil – packed
- 1/2 Pink Grapefruit Segments
- 1 Cup Walnuts
- 1 Cup Aged Asiago Cheese
- 1/4 Cup Extra Virgin Olive Oil
- 1 1/2 Tablespoon Fresh Squeezed Lemon Juice
- 1 Clove Garlic
- 1 Teaspoon Sea Salt
Instructions:
Scoop out the grapefruit segments and combine all ingredients in a food processor or blender and puree.
