Stacked Greek Salad

This is such a simple yet elegant salad.



Recipe:  Single serving

  • 3 Slices Tomatoes
  • 12 Slices Cucumber
  • 1 Slice Red Onion
  • 2.5 Oz. Sheep Feta
  • 1 Tablespoon Fresh Oregano Leaves
  • 1 Tablespoon Fresh Squeezed Lemon Juice
  • 1 Tablespoon Extra Virgin Olive Oil
  • Kalamata Olives (Optional)


Slice the tomato and red onion.

Peal and slice the cucumber.

Cut the feta into thin rectangles.

Pick the leaves of oregano off the stem.

First lay 4 slices of cucumber on a small plate or shallow bowl, then a ring or 2 of red onion, then a tomato slice and sprinkle on some oregano and top with feta.

Continue this one more time and top with the last tomato slice and oregano.

 Drizzle on the lemon juice and the olive oil.  If you like kalamata olives you can arrange some around the bottom of the stack.

 I like to serve this with our Greek Style Lemon Feta Roasted Potatoes.
